TL;DR You can farm and trap just fine during winter. Fishing is so-so if you're good at it or pointless if not. You can farm just fine even when it's freezing throughout the day. Doesn't make sense but neither does the accelerated spoilage of player-canned/frozen goods (if on default settings) so that's a wash.
