At the most basic level, all beers can be categorised into two primary types: 1. Lager and 2. Ale. This bifurcation is done on the basis of the type of yeast used during the fermentation process. Ales are made with top-fermenting yeast that operates at warmer temperatures, and settles at the top of the beer.
